Have you ever had a doughnut from a bakery and noticed how the glaze is crisp and hard enough to allow the doughnuts to be stacked, but then you go home and whip together your milk and powdered sugar glaze and it never quite hardens? The trick, my friends, is to cook your glaze. Take that same glaze recipe you love (and if you don't have one, I use ¼ cup milk and 2 ½ cups powdered sugar) and simply cook it until its hot but not boiling. A word to the wise: if you plan on adding any sprinkles, mini chips, or anything else that needs to stick to the glaze, add it immediately after dipping your doughnuts. This glaze sets up fast!
