    (Mostly Healthy) Cake Batter Popsicles

    Why choose between breakfast and dessert when you can get both in these (mostly healthy) cake batter popsicles!

    Believe it or not, you read that right. MOSTLY healthy cake batter frozen yogurt popsicles!!

    Nope, sorry, that's all wrong. Let me do that again. *ahem*

    Copious amounts of sprinkles... Flashy graphics... Yeah, that's more like it. I mean, at this point I imagine you're either hungry or having a seizure. Either way, sorry?

    Hopefully you're just hungry and itching to get your hot little hands on the aforementioned mostly healthy cake batter popsicles because THAT I can help you with. And holy moly are your taste buds AND waistline going to be happy with you (<--- Savor that latter part because that is NOT something we can say everyday around these parts). Seriously, we're talking 125 calories a pop here folks.

    For those of you that know me, you may be wondering "Why healthy? Copious amounts of calories and sugar never stopped Claire before." To which I would say touché, and also remind you that this is a judgement free zone. <---DESIGNATED JUDGEMENT FREE ZONE See, I made it all official there *uses hands to draw imaginary bubble around self*

    But after a particularly busy and somewhat stressful week at work, and an undisclosed number of empty cookie boxes that may or may not have been eaten during a time typically reserved for things called "breakfast" littering my cubicle space, I had to admit that I may have been over indulging myself. Seriously guys, I literally caught myself thinking "Why don't I have any cake right now?" at 9am this morning. Remember, JUDGEMENT FREE ZONE *points at sign that has suddenly appeared on the wall*

    Also, the afternoon sugar coma crash was starting to feel counter productive. There just HAD to be a way to be healthy AND get my early morning cake fix (because, priorities people). Enter the mostly health cake batter popsicle. If you didn't imagine that with angelic light and a chorus of angels in the background, you're doing it wrong.

    Let's try that again: MOSTLY HEALTHY CAKE BATTER POPSICLES! *Aaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaw*

    These low calorie, low fat cake batter yogurt popsicles are so good, you won't believe they're almost healthy.

    • Yield: 10 small popsicles

    Ingredients

    Scale
    • 1 cup low fat vanilla yogurt
    • ½ cup heavy whipping cream
    • 2 tsp butter emulsion (extract)
    • ⅓ cup pink candy melts
    • Sprinkles

    Instructions

    1. In a small bowl, whip the whipping cream until stiff peaks form. Add the low fat vanilla yogurt and butter emulsion, stirring until thoroughly mix. Shake a few sprinkles into each of the molds and cover with the yogurt mixture (adding the sprinkles to the whole mixture may cause the colors from the sprinkles to run, depending on the kind of sprinkles you're using).
    2. Put the molds into the freeze and allow to set overnight, or for at least 5-6 hours.
    3. Remove the popsicles from the molds, drizzle with a teaspoon or two of melted pink candy melts, and garnish with more sprinkles.

      We want to try these! Question— will the melted pink candy not melt them when drizzled?? And tips for this part?

        Hi Angela! The pink candy melts should be melted but not hot so it shouldn't melt the popsicles. I put my melted candy melts in a piping bag so I could better control where the drip was.
