I mentioned in my previous post about double chocolate muffins that I’m not a morning person. In fact, I’m more of a morning zombie. And it’s because of my inability to function in the mornings that I have a wide array of make-ahead breakfast recipes, particularly muffins. So if you’re in need of a little extra motivation to pour yourself out of bed this morning, I can guarantee these chocolate chip cookie and sea salt muffins will do the trick! They make your mornings easier AND sweeter (and really, what could be better than that?)!
Chocolate Chip Cookie and Sea Salt Muffins
Yields about 12 muffins
What you’ll need:
1/2 stick (57 grams) butter
1/4 cup milk
1/2 cup granulated sugar
1/4 cup brown sugar
1 tsp. baking soda
1 tsp. vanilla extract
2 eggs
1 cup all purpose flour
1/4 cup chocolate chips
Sea salt (for garnishing)
Start by preheating your oven to 425* Fahrenheit (205* Celsius) and lining or greasing your muffin pan(s). In a large, microwave-safe bowl, melt your butter. Stir in your milk and reheat until the mixture is warm (it’s ok if the milk and butter separate as long as they’re both warm). Add your sugars and stir until they dissolve. Add your baking soda and vanilla extract. One at a time, add your eggs, whisking between each new addition. Stir in your all purpose flour, and continue stirring until everything is completely combined. You can add your chocolate chips now, if you’d like, but they have a tendency to sink to the bottom of your pan, so I’d recommend pouring your batter into your prepared pans and then adding your chocolate chips on top. The muffin will rise up around the chocolate chips anyway, but at least this way they’ll be more in the center of your muffins rather than down on the bottom in one glommy mess that makes removing them from the pan(s)/liners exponentially more difficult.
Bake your muffins at 425* Fahrenheit (205* Celsius) for 3-5 minutes, then reduce the oven to 350* Fahrenheit (175* Celsius) and continue baking for about 15 minutes, or until a toothpick inserted in the center comes out clean. When you have just a few minutes of bake time left, sprinkle your muffins with a little sea salt. If sea salt’s not your thing, the muffins taste great without it too.
